Pavlova is considered to be Australia’s national dish. It is a delicious combination of fresh fruits, whipped cream and meringue. Chef Herbert Sachse of the Hotel Esplanade in Perth, Western Australia created the pavlova to celebrate the visit of the great Russian ballerina, Anna Pavlova. He claimed the dessert was as light as Pavlova herself.
Two of the characters in my book savor this ambrosia from Heaven as well as many other Australian foods.
